Sheet Pan Chicken & Veggie Fajitas
Whenever I need to mix up my meal prep a bit, Mexican food is always the answer I’m looking for. Whether it’s tacos or a loaded burrito bowl, those flavors and a little spice never fail to hit the spot. But let’s get real, sometimes the craving hits and you need to throw together a meal ASAP before you get hangry. Cue the sheet pan meal! I’m always pleasantly surprised by how delicious but simple and quick to prepare this meal is, leaving you with more time to whip up a margarita to enjoy it with 🙂
Ingredients
- 1.5 lb1.5 lb1.5 lb Chicken Breasts, Boneless Skinless, ~ 3 chicken breasts, cut into strips

- 222 Bell Pepper, sliced
- 1 pint1 pint1 pint Tomato, Cherry

- 111 Yellow Onion, sliced
- 111 Jalapeño Pepper, sliced
- 3 Tbsp3 Tbsp3 Tbsp Avocado Oil, or olive oil
- 0.5 cup0.5 cup0.5 cup Cilantro
- 111 Lime, juiced

- 1.31 oz1.31 oz1.31 oz Taco Seasoning, 1 packet

- 6 - 86 - 86 - 8 Corn Tortilla, to serve; plus toppings of choice - avocado, cheese, sour cream, lettuce, salsa, hot sauce, etc

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Preheat oven to 425 degrees.
- Place veggies and chicken on a metal baking sheet, and cover with oil and spices. Toss to coat completely.
- Spread into one, even layer. Roast for about 25 minutes, until chicken is cooked through.
- If you'd like the vegetables more roasted, remove chicken and set aside. Cover with foil to keep warm. Toss veggies and return to the oven for an additional 10-15 minutes (or until they're to your liking).
- When finished, return chicken to the sheet pan (if removed), squeeze on lime juice and cilantro. Toss, and serve in tortillas with toppings of your choice. Enjoy!
