Gluten Free Banana Muffins
In Hawai’i banana bread means tutu’s love, it is part of life here. There are many different versions of banana bread here, mine of course includes a bit of chocolate! There are many different types of bananas, living in the tropics means we have access to a variety, so if you live somewhere with different bananas try them and see which you prefer. The ones I used are Namwah, but the apple bananas are tasty too.
Ingredients
- 1.5 cups1.5 cups1.5 cups Gluten-Free All-Purpose Flour - Primal Palate

- .33 cup.33 cup.33 cup Coconut Sugar, or maple sugar

- 1 tsp1 tsp1 tsp Baking Soda
- .25 tsp.25 tsp.25 tsp Salt

- 333 Banana, ripe, I used 5 smaller local bananas
- 222 Eggs
- .25 cup.25 cup.25 cup Avocado Oil, or olive oil
- 1 tsp1 tsp1 tsp Pure Vanilla Extract

- .5 tsp.5 tsp.5 tsp Cinnamon, Ground

- .5 cup.5 cup.5 cup Macadamia Nuts, Raw, chopped
- .5 cup.5 cup.5 cup Dark Chocolate Chips

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Preheat the oven to 350 degrees. Oil muffin pan or use muffin liners.
- In a bowl add the flour, sugar, baking soda, and salt. Stir and set aside.
- In a small bowl add the ripe banana and using a fork break up and mash.
- Add in the egg, oil, vanilla, cinnamon and stir.
- Pour the banana mixture into a mixing bowl.
- Slowly add the flour mixture and stir or use paddle attachment to blend.
- Fold in the nuts and chocolate chips.
- Using an ice cream scoop fill 11-12 of the muffin wells.
- Bake for 14-15 minutes, until a toothpick comes out clean.
- Let cool in pan for 3-4 minutes before removing.
- Store in airtight container for up to 3 days. You can freeze these as well.
Notes
You can top with 1/2 tsp of turbinado sugar on top of each muffin batter prior to baking if you’d like to add a bit more sweetness and crunch. In place of the chocolate chips you can add 1/2 cup of drained minced pineapple.
