Ingredients
berry & bacon meatballs
- 2 oz2 oz2 oz Triple Berry Bright Side Granola – Seven Sundays

- mixed berry compote (click for recipe), using raspberries & strawberries

berry & bacon meatballs
- preheat oven to 400.
- first add bright side granola to a food processor & blitz a few times into a finer crumble.
- to a bowl, add granola & remaining meatball ingredients.
- using a small cookie scoop, make mini meatballs (36-42).
- place meatballs on a lined baking dish, then bake for 12-15 minutes.
red berry compote
- follow my instructions for making the mixed berry compote, but use a combo of strawberry/raspberry smash food's jam & frozen strawberries/raspberries.
building your pan-stackers
- to each pancake, stack: red berry compote → berry & bacon meatballs → bacon → goat cheese → bright side granola → blueberries → drizzle of red berry compote.
