Healthy Chocolate Chip Birthday Cake
Who doesn’t love cake on their birthday? My toddler just turned 3 and of course he wanted cake. However, I didn’t want something that would wreck his gut, so I made him this one. It’s so delicious and actually healthy. You can’t ask for anything better than that!
Ingredients
- 3 whole3 whole3 whole Eggs
- 0.5 cup0.5 cup0.5 cup Olive Oil

- 0.75 cup0.75 cup0.75 cup Monk Fruit Sweetener, Or regular cane sugar works!

- 1.5 cups1.5 cups1.5 cups Almond Flour

- 1 cup1 cup1 cup All Purpose Flour
- 2 tsp2 tsp2 tsp Baking Powder

- 1 cup1 cup1 cup Almond Milk
- 0.333 cup0.333 cup0.333 cup Rainbow Sprinkles

- 0.5 cup0.5 cup0.5 cup Baking Chocolate Chips

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Preheat your oven to 315 degrees or 350 if using a regular cake pan.
- In a mixing bowl, add your eggs, olive oil and monk fruit sugar. Whisk together. Then add your almond flour, all purpose flour, and baking powder. Whisk together. Add the milk. Stir until the cake batter is formed. Fold in the sprinkles and chocolate chips.
- Grease two deep, 6 inch cake pans or two regular 9 inch cake pans. Pour batter into the cake pans. Place in the oven and bake for 25-30 minutes or until cooked all the way through.
- Remove from oven and let cool.
- Frost your cake with whatever frosting you wish… we chose Miss Jones Vanilla Frosting.

Notes
The deep dish 6 inch cake pans are going to bake slower than regular cake pans. If you bake them at 350, the top of the cake will cook faster than the inside. If you use a regular cake pan, you may need to drop the time.
