Tamarind glazed chicken wings
Spice up your meal with these tangy chicken wings. These wings are marinated in a blend of fresh locally sourced herbs and spices then generously coated with a tantalizing tamarind glaze. You can ejoy them on their own or pair them with your favorite side dishes.
Ingredients
For marinade
- 2 lb2 lb2 lb Chicken Wings

- 0.25 cup0.25 cup0.25 cup Green Seasoning (click for recipe)
- 1 Tbsp1 Tbsp1 Tbsp Organic Ground Cumin - The Spice Lab

- 2 Tbsp2 Tbsp2 Tbsp Ginger Root, minced or finely grated

For glaze
- 1 cup1 cup1 cup Orange Juice
- 1 cup1 cup1 cup Water
- 1 cup1 cup1 cup Tamarind, fresh
- 0.5 cup0.5 cup0.5 cup Brown Sugar

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
For marinade
- In a large bowl, combine wings, green seasoning, grated ginger and cumin.
- Marinate chicken with mixture for at least 2 hours or overnight.
For glaze
- Soak tamarind in 1 cup of water for 30 minutes to remove the seeds. Use your hands to squeeze out the pulp and separate the seeds.
- Strain and add tamarind pulp to a pot together with orange juice and sugar. Cook until thickened.
- To cook, place seasoned wings on a medium heated grill flipping every 5-7 mins until lightly charred. You can transfer the wings to the oven to finish cooking or continue cooking on the grill until an internal temperature of 165°F. If a grill is unavailable, lay wings on a sheet tray lined with parchment paper and place in a preheated oven @ 375°F for 1 hour (flipping 2x through the cooking time for color).
- Baste wings with your desired amount of tamarind sauce. Let the wings cook for 10 minutes at 400°F or until caramelization forms.
- Serve with your desired side dishes or enjoy on its own.
Notes
The use of tamarind paste makes the perfect substitute.
