Creamy Burrata Bruschetta
If there’s one thing I would eat on repeat all summer, it’s this Creamy Burrata Bruschetta with juicy tomatoes and fresh basil. It’s one of my favorite summer appetizers, plus it’s quick to make and so refreshing! Perfect for a light meal during summer, or as a starter to share with friends.
Ingredients
- 10 pieces10 pieces10 pieces Sourdough Bread, or any bread of your choice
- 0.75 cup0.75 cup0.75 cup Tomato, Cherry, chopped

- 1 Tbsp1 Tbsp1 Tbsp Extra Virgin Olive Oil - Thrive Market, and more for drizzling

- 1 tsp1 tsp1 tsp Balsamic Vinegar
- 0.5 tsp0.5 tsp0.5 tsp Sea Salt

- 0.5 tsp0.5 tsp0.5 tsp Black Pepper - The Spice Lab

- 1 clove1 clove1 clove Garlic

- 1 whole1 whole1 whole Burrata, around 150g
- 1 Tbsp1 Tbsp1 Tbsp Organic Balsamic Glaze, for drizzling

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Preheat the oven to 200 C / 390 F and set aside a baking sheet. You can optionally line with parchment paper.
- Slice the bread into thick slices, about 2cm, and place onto the tray.
- Brush or drizzle the bread with some olive oil and toast in the oven for 8-10 minutes.
- While the bread is toasting, in a mixing bowl add the chopped tomatoes, basil leaves, olive oil, balsamic vinegar, salt and pepper. Mix well to combine. Set aside for a few minutes to let the tomatoes marinate and absorb the flavors.
- Once the toasted bread is out of the oven, take the garlic clove and rub it on the toasted bread slices. Then mince the rest of the garlic, and add it to the tomato mixture. Taste and adjust for seasoning.
- Carefully add a small spoonful of the tomato mixture onto each slice of bread.
- Add a small piece of burrata on top of each toast and finish with a drizzle of balsamic glaze. You can also top with additional sea salt and olive oil if you wish.
- Serve and enjoy! It is best enjoyed at room temperature or slightly chilled.
Notes
- You can alternatively toast the bread in a toaster or regular skillet. Simply place the slices of bread on the pan with a drizzle of olive oil and toast for 2-3 minutes on each side until golden brown. If using a grill pan, you should have nice grill marks on your toast.
- Drain excess moisture if the tomatoes release too much water.
- Use high-quality ingredients!
