Healthy Banana Pancakes recipe
Stuck with a couple of overripe bananas and don’t know what to do with them? Don't make yet another banana bread, try this easy Banana Pancakes recipe instead!

- 222 Banana, medium, overripe
- 222 Eggs, large
- .5 cup.5 cup.5 cup Milk
- 1.5 cup1.5 cup1.5 cup Oats, Rolled
- 2 tsp2 tsp2 tsp Baking Powder
- .5 tsp.5 tsp.5 tsp Cinnamon Powder - The Spice Lab
- 1 pinch1 pinch1 pinch Salt
- 1 Tbsp1 Tbsp1 Tbsp Olive Oil, or butter for cooking

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Add all ingredients into a blender. Blend on high speed until you have a smooth batter. Let the batter sit for 3-5 minutes to thicken.
- Heat a skillet or non-stick pan over medium-high heat and lightly grease with butter or oil. I like to use a paper towel to spread the oil or melted butter into a thin layer across the pan.
- To make each pancake, pour ¼ cup batter into the hot pan - I like to make about 3 pancakes on the pan at one time. Cook for about 2 minutes until you see small bubbles forming on top and the edges forming.
- Flip the pancakes using a spatula and cook for another 1-2 minutes until the surface of the pancakes looks golden brown. Be careful not to overcook it. If the pan gets too hot, reduce the temperature to medium-low heat. Try not to press down too hard on the pancakes, this can flatten them and make them lose their fluff.
- Repeat the above steps for the remaining batter. Stack the pancakes and top with a little bit of cinnamon, maple syrup and fresh fruits, and serve immediately!
Notes
- Use very ripe bananas for a sweeter pancake.
- When flipping the pancakes, make sure they aren't sticking to the pan. Gently lift them to check the bottom before flipping.
- Top with additional toppings like nuts, fresh fruit or yoghurt!
