maple keto granola
after countless test batches, i finally perfected my keto, grain-free, sugar-free granola 🙌 feel free to mix & match your favorite nuts & seeds to make this your own. in case you are in need of some flavor inspo, check the notes for some combos i've tried!

dry ingredients
- 0.5 cup0.5 cup0.5 cup Chia Seeds, finely ground

- 0.5 cup0.5 cup0.5 cup Pecans, roughly chopped, may sub any nut or seed

- 0.5 cup0.5 cup0.5 cup Cashews, Raw, roughly chopped, may sub any nut or seed

- 0.5 cup0.5 cup0.5 cup Walnuts, roughly chopped, may sub any nut or seed

- 0.5 cup0.5 cup0.5 cup Pumpkin Seeds, roughly chopped, may sub any nut or seed

- 0.5 cup0.5 cup0.5 cup Hazelnut, roughly chopped, may sub any nut or seed
- 1 tsp1 tsp1 tsp Cinnamon, Ground

- 0.5 tsp0.5 tsp0.5 tsp Vanilla Finishing Salt - Texas Salt Co., or any type of salt you like

wet ingredients
- 0.25 cup0.25 cup0.25 cup Butter, Unsalted - Kerrygold, or coconut oil
- 0.25 cup0.25 cup0.25 cup mixed nut butter (click for recipe), or any nut butter of choice
- 0.5 cup0.5 cup0.5 cup Golden Monkfruit Sweetener (with Allulose) - Lakanto

- 1 Tbsp1 Tbsp1 Tbsp White Miso Paste

- 1 tsp1 tsp1 tsp Pure Vanilla Extract

- 1 tsp1 tsp1 tsp Organic Maple Extract

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- preheat oven to 300.
- in a bowl, combine chia seeds + any nuts/seeds (roughly chopped) combination you like with cinnamon & smoked salt.
- in a sauce pan over medium heat, melt fat of choice (i love to brown the butter first), nut butter, & monk fruit.
- remove from heat, then add miso, vanilla extract, & maple extract.
- using a large spatula, thoroughly mix wet ingredients into dry ingredients.
- add granola to a half-sheet baking sheet.
- bake for 10 minutes, then take it out and mix thoroughly.
- press down mixture very firmly, then bake for an additional 15 minutes.
- once the granola is done baking, press firmly again. allow it to cool completely.
- I then transfer the granola to the freezer for ~1-2 hours before breaking into clusters; store in the freezer.
Notes
- maple apple pie: add apple pie spice & freeze dried apples
- maple bacon: use bacon grease + add bacon bits
- maple chili: use chili crisp oil + add a spicy smoked salt & chipotle powder
