turtle protein cookies

my grain-free protein cookies just got a cozy upgrade with caramel, chocolate, pecans, & a touch of miso—because yes, miso in desserts is one of my all-time faves. perfectly sweet, a little salty, & honestly…cookie perfection in every bite!
Ingredients
miso “buttercream” protein frosting
- 0.5 cup0.5 cup0.5 cup Cottage Cheese
- 0.5 tsp0.5 tsp0.5 tsp Pure Vanilla Extract

- .5 tsp.5 tsp.5 tsp Organic Maple Extract, or caramel extract
- 2 - 3 Tbsp2 - 3 Tbsp2 - 3 Tbsp Powdered Monkfruit Sweetener - Lakanto

- 1 Tbsp1 Tbsp1 Tbsp White Miso Paste

- 0.25 cup0.25 cup0.25 cup Hazelnut Collagen Peptides Powder - Further Food

- 0.25 tsp0.25 tsp0.25 tsp Bourbon Barrel Smoked Vanilla Finishing Salt - Texas Salt Co., or regular sea salt

- 111 Egg
- 0.5 tsp0.5 tsp0.5 tsp Pure Vanilla Extract

- 3/4 cup3/4 cup3/4 cup Almond Flour

- 2 Tbsp2 Tbsp2 Tbsp Coconut Flour

- 2 Tbsp2 Tbsp2 Tbsp Black Cacao Powder
- 0.25 cup0.25 cup0.25 cup Chocolate Protein Powder - Be Well by Kelly

- 1 tsp1 tsp1 tsp Baking Soda
- 0.5 tsp0.5 tsp0.5 tsp Chocolate Caramel Salt Electrolyte Mix - LMNT

- 0.25 cup0.25 cup0.25 cup Chocolate Salted Caramel Baking Chips - Lily's
- 0.25 cup0.25 cup0.25 cup Organic Sprouted Pecans - Lark Ellen Farm, finely chopped

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
miso “buttercream” protein frosting
- to a food processor, add cottage cheese & vanilla extract.
- once pureed, add remaining ingredients & blend until fluffy.
- refrigerate until cookie is completely cooled.
cookie
- to a saucepan, add fat of choice & melt over medium heat (to brown butter, stir butter occasionally & cook for an additional 8-10 minutes to brown).
- transfer fat to a bowl; allow to cool.
- add nut butter, monk fruit, egg, & vanilla extract melted fat; mix together using a hand mixer.
- in a separate bowl, mix together almond flour, coconut flour, cacao powder, protein powder, baking soda, & salt, then mix into wet ingredients.
- fold in chocolate caramel chips & pecans.
- place cookie dough in refrigerator for 30 minutes.
- preheat oven to 350.
- using a cookie scoop (size of choice), scoop out cookies onto a baking sheet.
- using a small measuring spoon, press an indention into each cookie, then bake for 9-10 minutes.
- once finished cooking, press down on indention again, then use a round object to get cookies into more of a circle shape.
- allow to cool completely, then add a scoop of miso caramel “buttercream” protein frosting to each cookie.
- press a pecan half in the center.
- melt chocolate caramel chips, then drizzle on top of each bite (I melted the chocolate, then added to a small zip lock bag. then cut a tiny hole in the corner & pipe onto each bite).
- sprinkle a little salt on top, then allow to harden.
- refrigerate or freeze for storing.
