Pecan Oat Bars
The easiest treat to make your kids are these pecan oat bars. They will think they are dessert, but really, it’s a simple recipe that is extra nutritious! They’re so easy to make and you can easily swap out the pecans for something else your kids love, like chocolate chips.
Ingredients
- 3 whole3 whole3 whole Banana
- 2 whole2 whole2 whole Eggs
- 2 cups2 cups2 cups Oat Flour

- 1 tsp1 tsp1 tsp Baking Powder

- 0.5 cup0.5 cup0.5 cup Pecans, Optional

- 1 tsp1 tsp1 tsp Cinnamon, Ground, Optional

- 6 - 8 whole6 - 8 whole6 - 8 whole Medjool Dates
- 0.25 cup0.25 cup0.25 cup Coconut Oil
- 1 tsp1 tsp1 tsp Pure Vanilla Extract

- 0.25 cup0.25 cup0.25 cup Almond Butter

- Preheat your oven to 350 degrees.
- Grease an 8x8 pan. Set aside.
- In a mixing bowl, add your bananas, eggs, oat flour, baking powder, and vanilla extract. Mix together. Fold in your desired add-ins… this recipe has pecans and cinnamon.
- Press into your baking dish. Place in the oven and bake for 15-18 minutes. Let it cool.
- While the bars are cooling, add your dates, melted coconut oil, vanilla extract and almond butter to a blender. Blend until a caramel paste is formed. Spread evenly over the bars. Enjoy!
