Yes you read that correctly, I said cauliflower ice cream. This was actually supposed to be the sauce for Mac and cheese, but when I blended it, the texture was like a frosty. I knew immediately I had to turn this into something sweet. What a great way to hide veggies and protein from your kids!

  1. In a blender, add all of your ingredients. Blend until it becomes creamy. Add to a container to place in the freezer. Let it freeze for a few hours. Top with melted chocolate and sprinkles, and let them enjoy!
