Cauliflower Ice Cream
Yes you read that correctly, I said cauliflower ice cream. This was actually supposed to be the sauce for Mac and cheese, but when I blended it, the texture was like a frosty. I knew immediately I had to turn this into something sweet. What a great way to hide veggies and protein from your kids!
Ingredients
- 1 cup1 cup1 cup Cauliflower Rice, Frozen
- 1 cup1 cup1 cup Cottage Cheese
- 0.5 cup0.5 cup0.5 cup Medjool Dates
- 0.25 cup0.25 cup0.25 cup Heavy Whipping Cream
- 1 tsp1 tsp1 tsp Vanilla Extract

- In a blender, add all of your ingredients. Blend until it becomes creamy. Add to a container to place in the freezer. Let it freeze for a few hours. Top with melted chocolate and sprinkles, and let them enjoy!

You can swap the dates out for any sweetener of choice. You can also add more depending on how sweet your kids want it.
