Nut-Free Granola Bars
These nut-free granola bars are the perfect school-safe snack! Made with granola butter that tastes just like cookie dough, you won't believe these are super healthy! They make a great afternoon snack and are packed with good-for-you ingredients.
Ingredients
For the Granola Bars
- 8 whole8 whole8 whole Medjool Dates, pitted
- 1 cup1 cup1 cup Hot Water, preferably boiled
- 1 Tbsp1 Tbsp1 Tbsp Hot Water
- 0.5 cup0.5 cup0.5 cup Pure Maple Syrup
- 0.5 cup0.5 cup0.5 cup Cookie Dough Granola Butter - Oat Haus, 1/2 cup + 1 tbsp
- 1 tsp1 tsp1 tsp Pure Vanilla Extract

- 2.5 cups2.5 cups2.5 cups Sprouted Rolled Oats - One Degree Organic
- 0.25 cup0.25 cup0.25 cup Oat Flour

- 2 Tbsp2 Tbsp2 Tbsp Chia Seeds
- 0.25 cup0.25 cup0.25 cup Sunflower Seeds
- 0.25 cup0.25 cup0.25 cup Pumpkin Seeds

- 0.333 cup0.333 cup0.333 cup Semi-Sweet Chocolate Chips

For the Chocolate Drizzle
- 0.75 cup0.75 cup0.75 cup Semi-Sweet Chocolate Chips

- 1 tsp1 tsp1 tsp Coconut Oil

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Line a 9x9 inch pan with parchment paper and set aside.
- To a small bowl, add your pitted dates with boiling water, and let soften for about 5 minutes. Drain and set aside.
- To a food processor, combine dates and warm water and pulse until blended into a paste.
- Add maple syrup, Oat Haus Granola Butter, and vanilla extract and lightly pulse together until well combined.
- Pour in rolled oats, oat flour, chia seeds, sunflower seeds, and pumpkin seeds and pulse about 10-15 times, just until all ingredients are well combined. You do not want to fully blend the oats and seeds.
- Add in chocolate chips and pulse for 3-5 seconds, then fold in gently with a spatula.
- Pour granola bar mixture into a lined square pan and place in the freezer for 1-2 hours.
- Prepare chocolate drizzle by melting chocolate chips and coconut oil in the microwave in 25-30 second increments, stirring in between until fully melted.
- Remove bars from the freezer, cut into bars and drizzle with melted chocolate. Place on a lined baking tray and put back in the freezer for 15-20 minutes to allow the chocolate to harden.
- Store in an airtight container in the freezer for up to one month.
