This blueberry baked oatmeal is truly a delicious way to start the day with protein and fiber. Plus, you can meal prep this ahead of time so you have breakfast ready for the week! The almond extract REALLY is a game changer here and I wouldn't leave it out (trust me). I love using THIS PROTEIN POWDER (JOYFUL saves 10%) in this recipe but I also love THIS ONE (JOYFUL12 saves 15%) for a lower fat option.

Process

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Mix the dry ingredients together in a large bowl.
  2. Add in the rest of the ingredients aside from chocolate chips and blueberries and combine.
  3. Fold in the chocolate chips and blueberries.
  4. Pour into a greased 9x13 casserole dish and bake at 350 for 20-25 min.
  5. This will firm as it cools - wait 5-10 min to cut into squares.
