Protein Fudgy Ice Cream Bars (Edit recipe)

This 3 ingredient, high protein treat is perfect to satisfy your sweet tooth while still getting in a good amount of protein. I promise you do not taste the cottage cheese. This texture is creamy and is somehow a cross between fudge and ice cream. You need to make this! I have added optional sweeteners in the notes, however I never have needed to add them.

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Blend cottage cheese and peanut butter together until smooth.
  2. Melt chocolate.
  3. Mix the chocolate and cottage cheese mixture together and add a pinch of salt.
  4. Pour into a parchment lined 8x8 pan and freeze for 3 hours.
  5. Cut into squares and store in freezer. Let thaw for 1-2 min before eating.

Notes

If you think this needs to be sweeter, you can add 2-3 TBS of monk fruit, maple syrup, or sweetener of choice. If you're using sweetened chocolate chips, you shouldn't need to add this but make sure you taste some before you freeze it and see if you want to add more sweetener đŸ™‚
