while these may look spooky, the ingredients in these halloween protein cookies are anything but scary đŸ‘»

these mini treats start with my classic grain-free cookie base—high protein, sugar-free, & totally grain-free.

then comes the fun part: a festive takeover with bats & spiders made from BTR nation almond butter cups, fit joy pretzels, & catalina crunch sandwich cookies—spooky, fun, & better-for-you! đŸŠ‡đŸ•žïž

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results

cookie dough

  1. to a saucepan, add coconut oil (or fat of choice) & melt over medium heat.
  2. transfer melted coconut oil to a bowl; allow to cool.
  3. add almond butter, monk fruit, egg, & vanilla extract melted fat; mix together using a hand mixer.w
  4. in a separate bowl, mix together almond flour, coconut flour, protein powder, baking soda, & salt, then mix into wet ingredients.
  5. place cookie dough in refrigerator for 30 minutes, then make spiders & bats!

spiders & bats

  1. get out all ingredients, the melt a little cup of dark chocolate for the “glue”.
  2. to make eyes, take a white chocolate chip & dab a little melted dark chocolate for the eyeball.
  3. to assemble spiders: dip bottom of “eyes” in a little chocolate, then place 2 on a BTR almond butter cup. then, dip cut pretzel sticks into chocolate & stick 6 “legs” on the outside of the bat. refrigerate to harden.
  4. to assemble bats: gently remove outer layer of a sandwich cookie (i love catalina crunch!), then cut in half. dip bottom of “eyes” in a little chocolate, the place on corner of cookie. dip back side of the “wings” in chocolate, then place 2 on a BTR almond butter cup. refrigerate to harden.

baking & assembling cookies

  1. preheat oven to 350.
  2. using a large cookie scoop, scoop out cookies onto a baking sheet; bake for 12-14 minutes.
  3. once finished cooking, option to use a round object to get cookies into more of a circle shape.
  4. transfer cookies to a cooling rack, then stamp your spiders or bats in the center of each cookie.
  5. allow to cool completely & enjoy your halloween treat!
