Meal Prep Breakfast Burritos
Meal prep is the name of the game over here these days, and these really never fail to hit the spot! You could always add any veggies or protein of your choice, but I personally love this simple but super flavorful combo. You'll be so grateful that you prepped a batch of these for the week ahead, so be sure to give me a shout if you do π
Ingredients
- 2 Tbsp2 Tbsp2 Tbsp Extra Virgin Olive Oil

- 111 Bell Pepper, I prefer orange, red, or yellow; diced
- 111 Yellow Onion, diced
- 1 tsp1 tsp1 tsp Garlic Powder

- 1 tsp1 tsp1 tsp Chili Powder
- 0.5 tsp0.5 tsp0.5 tsp Black Pepper

- 0.5 tsp0.5 tsp0.5 tsp Salt

- 1 lb1 lb1 lb Ground Pork, I used a spicy Italian pork sausage

- 101010 Eggs, whisked with 2 tbsp milk and a pinch of salt & pepper (to taste)
- 1 cup1 cup1 cup Sharp Cheddar Cheese, more if desired
- 888 Flour Tortilla, large, burrito size

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Add olive oil to a large pan over medium heat. Add onion, bell pepper, garlic powder, chili powder, salt and pepper. Cook for about 5 minutes, until veggies begin to soften.
- Add ground sausage to pan, and break into small pieces. Allow meat to cook through completely.
- In a separate bowl, whisk together eggs with milk, salt, and pepper. Pour eggs into the pan with meat and veggies. Stir, and allow eggs to cook, about 3-4 minutes. Remove from heat.
- Assemble burritos by adding a couple generous spoonfuls of meat and egg mixture to the center of your tortilla. Cover with a sprinkle of cheese. Fold over the sides of the tortilla inwards, tuck up the bottom, and roll to create a tight wrap.
- Wrap each burrito in parchment paper or foil, and place in an air-tight, resealable bag or container in the freezer.
- To Heat: Ideally remove the burrito from the freezer the night before and allow to thaw in the fridge overnight. Then I recommend air frying for about 8-10 minutes at 350. If frozen, air fry at 300 degrees for ~25 minutes, until completely warmed through, or if using the oven, place frozen burrito on a sheet pan and warm at 350 for 30 - 40 minutes.
