Cheesy Cauliflower
My entire family loves cauliflower and my husband has fond memories from childhood of cheesy cauliflower in particular. This side dish comes together with little fuss and there won’t be leftovers.
Ingredients
- 1 head1 head1 head Cauliflower, cut into small florets
- .5 cup.5 cup.5 cup Heavy Whipping Cream
- .5 cup.5 cup.5 cup Yogurt, Plain, or sour cream
- 1 cup1 cup1 cup Gruyere Cheese, shredded

- 1 cup1 cup1 cup Aged Cheddar Cheese, shredded

- .5 cup.5 cup.5 cup Parmesan Cheese, shredded

- .5 tsp.5 tsp.5 tsp Sea Salt

- .25 tsp.25 tsp.25 tsp Black Pepper

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Cut up the cauliflower and put into large pot with about 1” of water, cover and bring to boil. Cook 5 minutes, stir 1-2 times.
- Drain water and leave cauliflower in pan and covered on stove to stay warm.
- In a small pan add cream and yogurt. On medium-low heat warm through and stir with whisk to blend together.
- Add cheeses, salt, and pepper. Stir and let cook until all cheese is melted and smooth.
- Pour cheese mixture into pot with cauliflower. Stir and enjoy.
Notes
Alternatively you can make this per the instructions and refrigerate then heat in oven on 350 for 10-12 minutes. I like to sprinkle a little extra Parmesan on top if I do this.
