GF/DF White Chicken Chili
I was craving a White Chicken Chili soup that would be creamy, delicious and also Thyroid healing friendly with a slight amount of spice but not too much so that the kids would love it too. This recipe hit the spot for all adults and children in my home so here it is for you as well!
Ingredients
- 2 lb2 lb2 lb Chicken Tenders, cooked and shredded

- 0.5 cup0.5 cup0.5 cup Water
- 0.5 tsp0.5 tsp0.5 tsp Garlic Powder

- 0.5 tsp0.5 tsp0.5 tsp Onion Powder

- 0.25 tsp0.25 tsp0.25 tsp Sea Salt

- 1 Tbsp1 Tbsp1 Tbsp Avocado Oil
- 1 whole1 whole1 whole Onion, chopped
- 4 clove4 clove4 clove Garlic, minced

- 30 oz30 oz30 oz Cannellini Beans, 2 15oz cans drained and rinsed
- 8 oz8 oz8 oz Green Chiles, Fire Roasted
- 1.5 tsp1.5 tsp1.5 tsp Cumin, Ground

- 1 tsp1 tsp1 tsp Oregano, Dried

- 0.75 tsp0.75 tsp0.75 tsp Chili Powder
- 0.75 tsp0.75 tsp0.75 tsp Sea Salt

- 0.25 tsp0.25 tsp0.25 tsp Black Pepper

- 1.5 whole1.5 whole1.5 whole Lime, juice of 1 1/2 limes

- 4 cups4 cups4 cups Chicken Bone Broth

- 1 whole1 whole1 whole Dairy-Free Sour Cream Alternative - Forager Project, 1-2 Tbs per bowl of soup
- 0.5 cup0.5 cup0.5 cup Cilantro, chopped
- 1 whole1 whole1 whole Avocado, slices
- 0.5 cup0.5 cup0.5 cup Monterey Jack Cheese, *For those who can have dairy
- 1 whole1 whole1 whole Lime, extra slices for squeezing over each bowl

- 1 whole1 whole1 whole Maíz Sea Salt Corn Tortilla Chips - Siete Foods, handful of chips per bowl of soup

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Add 2lbs raw chicken tenders to Instant Pot with Garlic and Onion Powder, Sea Salt and water.
- Cook on Manual for 10 minutes.
- Once done, release pressure and stir with a fork to shred
- In a soup pot, heat Avocado Oil over medium high heat then add chopped onion to cook 3-4 minutes.
- Add the rest of the seasonings and the 8oz of Green Chiles to stir and cook 1-2 minutes.
- Add the cans of white beans, Bone Broth and Shredded chicken.
- Bring all ingredients to a simmer for 15 minutes.
- Once done, spoon the soup into bowls and top with the add ons of your choice. (I highly recommend the Forager Sour Cream & Cilantro at a minimum!)
- Enjoy!
Notes
You can easily start the chicken in your Instant Pot and make the rest of the ingredients in the soup pot while that cooks then add the chicken once done, like I did, OR cook the chicken in advance during meal prep a day or two ahead of time to make this recipe even quicker.
