- 0.5 cup0.5 cup0.5 cup Cottage Cheese
- 1 cup1 cup1 cup Pumpkin Purée
- 1 cup1 cup1 cup All Purpose Flour
- 0.25 cup0.25 cup0.25 cup Almond Flour

- 1 tsp1 tsp1 tsp Baking Powder

- 0.75 cup0.75 cup0.75 cup Coconut Sugar

- 1 Tbsp1 Tbsp1 Tbsp Pumpkin Pie Spice

- Preheat your oven to 350 degrees.
- Grease a muffin pan or add cupcake liners to the pan.
- In a blender, add your eggs, cottage cheese and pumpkin puree. Blend together. Pour into a mixing bowl. Add all of your other ingredients and stir together until your batter forms.
- Pour into the muffin pan.
- Place pan in the oven and bake for 18-20 minutes.
