cheesecake protein cookie dough balls
a cheesecake version of my protein cookie dough balls?! i think YES! a no-bake, high-protein cheesecake bite that are soft even stored in the freezer! they of course have the signature BTR protein bar, but also use cottage cheese (for that cheesecake feel), catalina crunch cereal & sandwich cookies, further foods vanilla collagen, & sugar-free white chocolate.

- 4 oz4 oz4 oz Honey Graham Protein Cereal - Catalina Crunch

- 1 cup1 cup1 cup Vanilla Collagen Peptides Powder - Further Food

- 0.5 cup0.5 cup0.5 cup Coconut Flour, + more as needed

- 0.5 cup0.5 cup0.5 cup Classic Monkfruit Sweetener (with Allulose) - Lakanto

wet ingredients

- 1 tsp1 tsp1 tsp Pure Vanilla Extract

roll-in
- 0.25 cup0.25 cup0.25 cup Coconut Flour

- 0.25 cup0.25 cup0.25 cup Powdered Monkfruit Sweetener - Lakanto

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- in a food processor, add dry ingredients blitz into a powder.
- transfer to a bowl.
- melt white chocolate chips, then allow to cool for 3-5 minutes.
- add melted white chocolate, cottage cheese, lemon juice, & vanilla extract to a a food processor & puree.
- add cottage cheese mixture to a bowl, then fold in dry ingredients (make sure it is a powdery consistency) - if the batter seems too sticky, add more coconut flour.
- put dough in freezer for 30-60 minutes, then form into little balls (teeny tiny or big - whatever floats your boat!).
- in a bowl, combine coconut flour + powdered monk fruit, then roll balls in the mixture.
- store balls in the freezer to enjoy at any time.
