This small-batch coconut bacon recipe is crispy, smoky, and vegan. A simple gluten-free alternative made with coconut flakes and pantry staples. Perfect for topping onto some avocado toast!

- 1 Tbsp1 Tbsp1 Tbsp Mushroom Instant Bone Broth - Bare Bones
- 1 Tbsp1 Tbsp1 Tbsp Nutritional Yeast

- 1 cup1 cup1 cup Coconut Flakes, Unsweetened
- 1 Tbsp1 Tbsp1 Tbsp Coconut Aminos
- 1 Tbsp1 Tbsp1 Tbsp Pure Maple Syrup

- 1 tsp1 tsp1 tsp Extra Virgin Olive Oil

- .5 tsp.5 tsp.5 tsp Smoked Paprika
- .5 tsp.5 tsp.5 tsp Garlic Powder

- 1 pinch1 pinch1 pinch Salt and Pepper
- 1 tsp1 tsp1 tsp Liquid Smoke, Hickory

- Preheat oven to 325°F (165°C). Line a baking sheet with parchment.
- In a bowl, gently toss coconut flakes with all remaining ingredients until lightly coated.
- Spread evenly in a thin layer.
- Bake 10–15 minutes, stirring every 4–5 minutes, until golden and crisp.
- Watch closely coconut burns fast!
- Remove from oven and let cool completely (it crisps as it cools).
- Assemble Toast:
- Mash 1/2 the avocado with bone broth
- Top on toasted sourdough
- Add Bacon bits and nutritional yeast and enjoy!
