Chicken Enchilada Skillet
I adore Mexican flavors and am always looking for new ways to make easy tasty dishes that highlight them. This comes together in one skillet and you can eat it as is, add chips, fill a tortilla, or spoon over rice. It is super flexible. For this recipe I used US Wellness Meats pasture raised chicken breasts, Citreve’s freeze dried cherry tomatoes, and Primal Palates adobo seasoning.

Ingredients
- 2 Tbsp2 Tbsp2 Tbsp Extra Virgin Olive Oil

- 333 Pasture-raised Chicken Breasts - US Wellness Meats, cut up into small 1/2-1” pieces

- .5.5.5 Onion, Any color, small dice
- 111 Celery, small dice
- 111 Bell Pepper, any color, small dice
- 2 cloves2 cloves2 cloves Garlic, minced

- 2 Tbsp2 Tbsp2 Tbsp Taco Seasoning - Primal Palate

- 1 tsp1 tsp1 tsp Sea Salt

- .5 tsp.5 tsp.5 tsp Black Pepper

- 1 cup1 cup1 cup Freeze-Dried Cherry Tomatoes - CITREVE

- 1 cup1 cup1 cup Diced Tomatoes & Green Chilies - Rotel
- .5 cup.5 cup.5 cup Red Enchilada Sauce - Siete Foods

- .25 cup.25 cup.25 cup Water
- 111 Green Onion (Scallion), sliced

- 1 cup1 cup1 cup Monterey Jack Cheese, shredded
- 111 Avocado, diced

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- In a skillet cook the chicken in oil on medium heat for 5-6 minutes.
- Add vegetables, stir and cook for 5 minutes.
- Add seasonings, tomatoes, salsa, and water. Stir and cook for 10 minutes on low heat.
- Spoon into bowls and top as you like.
Notes
You can add other toppings like lime, cilantro, red onions, diced fresh tomatoes…the ideas are endless.
