Honey & Maple Butter Cornbread
Here's a fun way to elevate a classic cornbread recipe using all-natural sugars and no refined sugars added. Mixed in one bowl, baked in one dish, this is the simplest addition to any dessert table.
Ingredients
- 1 cup1 cup1 cup Cornmeal, (medium-ground)

- 1 cup1 cup1 cup All Purpose Flour
- 0.333 cup0.333 cup0.333 cup Coconut Flour

- 1 Tbsp1 Tbsp1 Tbsp Baking Powder

- 0.5 tsp0.5 tsp0.5 tsp Kosher Salt

- 1 cup1 cup1 cup Cornmilk - Maizly

- 2 whole2 whole2 whole Eggs
- 0.5 cup0.5 cup0.5 cup Butter, Unsalted, (melted, reserve 5 tbsp on side)

- 0.25 cup0.25 cup0.25 cup Honey, (I like to use Greek honey)

- 5 Tbsp5 Tbsp5 Tbsp Almonds (Blanched), Slivered

- 2 Tbsp2 Tbsp2 Tbsp Pure Maple Syrup

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Preheat your oven to 400F and grease your 8x8 baking dish with neutral oil (I used avocado oil)
- In a large bowl, add and mixthe following wet ingredients; corn milk, eggs, melted butter (reserving 5 tbsp in a small bowl) and honey
- To that same bowl, add your dry ingredients; cornmeal, flour, coconut flour, baking powder, and salt (do not over mix)
- Pour batter into bakign dish and smooth it out
- Bake for 20-25min or until golden
- Remove from oven and poke holes scattered
- Pour the maple syrup into the butter mixture and spread it over the top of the cornbread
- Cut into 9 pieces and sprinkle with almonds, serve warm and top with extra maple syrup if you desire
Notes
Use an 8x8 square baking dish for best results and thickness. Slice up and sotre in tupperware on the counter for one day, then move it into the fridge. Before warming up a slice, you can add some butter over top and then pop it in the microwave for 20 seconds!
