Instant Pot Chicken and Split Pea Soup
Chicken and Split Pea soup is the perfect soup to cozy up to whenever you need a bit of comfort in a bowl. This soup has a delicious split pea base and is loaded with veggies, like carrot and potatoes. Swap out chicken thighs for breasts, if you prefer white meat or go bold and use a whole chicken, amp up the flavor and the nutrients of the soup.
Ingredients
- 2 lb2 lb2 lb Chicken Thighs, Boneless Skinless, halved

- 1 tsp1 tsp1 tsp Garlic Powder

- 1 Tbsp1 Tbsp1 Tbsp Onion Powder

- 1 tsp1 tsp1 tsp Sea Salt, divided

- 1 tsp1 tsp1 tsp Parsley, Dried

- 0.5 tsp0.5 tsp0.5 tsp Black Pepper

- 2 Tbsp2 Tbsp2 Tbsp Avocado Oil, or similar
- 1 whole1 whole1 whole Yellow Onion, Diced
- 6 cloves6 cloves6 cloves Garlic, finely, chopped

- 1 cup1 cup1 cup Yellow Split Peas, rinsed
- 1 lb1 lb1 lb Potatoes, White, peeled and diced
- 3 whole3 whole3 whole Carrots, peeled and sliced
- 3 whole3 whole3 whole Celery, sliced
- 5 sprigs5 sprigs5 sprigs Thyme, Fresh

- 1 Tbsp1 Tbsp1 Tbsp Adobo Seasoning, Whole30 Compatible

- 6 cup6 cup6 cup Water
- 3 whole3 whole3 whole Wiri Wiri Peppers, optional

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Combine the chicken, onion powder, garlic powder, salt, parsley flakes and black pepper in a large bowl and mix together well. Let marinate at room temperature for at least 15 minutes or over night in the refrigerator if time allows.
- Set your instant pot to sauté and when it is hot add the oil and let the oil come up to temperature
- Then add the onion and garlic and saute for a minute to two before adding the seasoned chicken
- Cook the chicken for about 3 minutes, stirring once or twice. Then add the washed split peas, potatoes, carrots, celery and fresh thyme followed by the adobo seasoning and water. Mix together well to combine.
- Then take the instant pot out of sauté mode by hitting cancel, seal up the instant pot and pressure cook on high for 30 minutes
- After the pressure cycle completes, rapid release the pressure, then add the wiri wiri pepper (if using) so that they can steam
- Give your soup a good stir and it is ready to eat
