These split pea nuggets are a delicious vegan alternative to chicken nuggets! We guarantee you will not be able to stop at eating just one. Yellow split peas are a good source of plant based protein and have a great texture for nuggets. The fennel seeds, ginger and cilantro add a delicious flavor and help aid in digesting the peas better.Some other options you can substitute or add are mint leaves, garlic, parsley or herbs of your choice.

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. SOAK the yellow split peas overnight or at least for 8hrs. This helps get the perfect texture and softness needed for this recipe.
  2. ADD all ingredients except oil into the food processor and blitz in short pulses. Make sure to not blend the ingredients into a batter like consistency, they need to have texture.
  3. HEAT up the oil in a pan
  4. SCOOP a spoon of the mix and make a ball. Flatten it and gently drop in the pan, follow the same to make multiple nuggets
  5. SHALLOW FRY till the bottom turns brown and flip. Fry till the other side browns and gets crisp.
  6. ENJOY your vegan nuggets with a dip or make larger sized patties to use as vegan burgers
