15-Minute Homemade Poke Bowl Recipe (Gluten Free)
If you love a sushi you'll love this easy poke bowl! This homemade poke bowl is packed with fresh veggies, rice, chicken or fish, and spicy mayo. This recipe is easy, convenient and packed with fresh ingredients. This delicious poke bowl is perfect for busy weeknights! I make it miltiple times a week in my house! Poke is a traditional hawaiian dish usually made with fresh sushi-grade tuna but in this version of a poke bowl recipe you can use any fish or chicken you want.
Ingredients
- .5 cup.5 cup.5 cup Jasmine Rice, cooked, or preferred variety
- 1 whole1 whole1 whole Chicken Breast, cooked/diced or canned tuna, ahi tuna, cooked salmon filet, sushi grade salmon, cooked shrimp
- .25 whole.25 whole.25 whole Avocado, sliced
- .25 cup.25 cup.25 cup Cucumber, chopped
- 2 Tbsp2 Tbsp2 Tbsp Sriracha Mayonnaise, gluten free, or preferred variety
- 1 Tbsp1 Tbsp1 Tbsp Onion, green, chopped

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Cook the white rice according to package instructions. While the rice cooks, prepare the other ingredients.
- Add the chicken or fish to a bowl. Top with spicy mayo an mix together.
- Top the serving bowl with rice with the spicy chicken or fish, sliced avocado and chopped cucumber.
- Drizzle the spicy mayo over the bowl and sprinkle with chopped green onions.
- Sprinkle with flaky sea salt and black pepper and drizzle with gluten free soy sauce for extra seasoning.
