3-Ingredient Blueberry Nice Cream Bars (Edit recipe)

Healthy nice cream bars are an easy, allergy-friendly + refreshingtreat we keep in our freezer year-round. Only 3 ingredients & no sugar added, these delicious blueberry nice cream bars are one of my kids’ favorites. The unsweetened canned coconut milk makes these extra creamy too.

Ingredients

  • 3 cups Banana, *See Notes* Sliced bananas, frozen at least 4 hours or overnight (about 3.5-4 medium-size bananas)
  • 1 pint Blueberries, Fresh, organic blueberries (not frozen)
  • 1 cup Coconut Milk, From can (I used unsweetened)

Process

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Add frozen banana slices, fresh blueberries and coconut milk to blender; cover blender and purée until smooth. You will see some tiny flecks from the blueberry skin in puréed mix.
  2. Pour mixture into 8-10 popsicle molds (sizes vary with popsicle molds).
  3. Freeze at least 4 hours or overnight before serving. Allow popsicle molds to sit at room temperature for 5-10 minutes before removing popsicles, especially if popsicles have been frozen overnight.

*Slice bananas 1/2-inch thick before freezing in a single layer on a parchment-lined sheet pan (by freezing them this way, in a single layer, the bananas won’t stick together once frozen).* Vegan.
