Apple Cinnamon Protein Cookies (Edit recipe)

The most saved recipes of mine are my protein cottage cheese cookies so I went ahead and came up with a new flavor - CINNAMON APPLE.

This high protein dessert is great for a weekly meal prep idea so you always have a protein snack on hand. You will NOT taste cottage cheese (the optional monk fruit sweetener does help in here!) and to really up the flavor factor I suggest using THIS Apple Cider Protein Powder (JOYFUL saves you 10%) but vanilla protein will also work!

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Mix all the wet ingredients together and then add the dry and combine.
  2. Fold in apple.
  3. Take a cookie scoop and scoop onto parchment lined baking sheet and shape into cookie form with hands. Slightly flatten. These will not spread and they will be soft.
  4. Bake at 350 for 20 min. Let sit for at least 15 min before removing from pan. They will firm up as they cool.
