These breakfast cookies are life changer during the week when your kids need something different. Mine love these so much and they’re so easy to make. Plus, it’s a fun way to use ripe bananas other than making banana bread!

  1. Preheat your oven to 350 degrees.
  2. Line a baking sheet with parchment paper.
  3. In a mixing bowl, add your banana, eggs and honey. Whisk together. Then add all of your other ingredients and stir until your cookie batter forms.
  4. Spoon cookie dough onto the parchment paper. Place baking sheet in the oven and bake for 15-18 minutes or until golden brown and cooked.
  5. Enjoy!
