these meatballs are like the classic grape jelly meatballs, but in a sugar-free version! plus, in my opinion they are WAY tastier. instead of traditional breadcrumbs, these meatballs use vandy's bbq beef tallow chips. these are a great meatball to meal prep, make into an appetizer, or just throw in a balanced bowl!

Process

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. preheat oven to 400.
  2. first add chips, monk fruit, & seasonings to a food processor & blitz a few times into a finer crumble.
  3. to a bowl, add chip mixture & remaining meatball ingredients.
  4. using a cookie scoop (any size), grab a scoop of meat mixture, then roll into a meatball.
  5. make sauce, by adding all ingredients to a food processor.
  6. place meatballs in a baking dish, then pour sauce over top.
  7. bake for 30-35 minutes.
