Chocolate chip cookie cheesecake bars
You'd never guess these indulgent cookie bars and gluten free and low sugar! They're the ultimate 2-in-1 dessert and satisfy all the cravings!
Ingredients

- .25 cup.25 cup.25 cup Classic Monkfruit Sweetener (with Allulose) - Lakanto, *

- .5 tsp.5 tsp.5 tsp Baking Soda
- 1 pinch1 pinch1 pinch Sea Salt
- .25 cup.25 cup.25 cup Butter, Unsalted, Softened
- 1 whole1 whole1 whole Egg, Room temp
- 1 tsp1 tsp1 tsp Pure Vanilla Extract
- 0.666 cup0.666 cup0.666 cup Dark Chocolate Chips
- 8 oz8 oz8 oz Cream Cheese, Full Fat, Soft
- 1 whole1 whole1 whole Egg Whites
- 0.25 cup0.25 cup0.25 cup Plain Greek Yogurt
- 0.5 cup0.5 cup0.5 cup Vanilla Protein Powder

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Set our ingredients to soften to room temp - butter, eggs, cream cheese
- Whisk cookie dough dry ingredients together, then fold in butter, egg, and vanilla, then fold in chocolate chips
- Press half the cookie dough into an 8x8 dish lined with parchment paper
- Make cheesecake- use an electric stand or hand mixer to whip cream cheese, then add protein powder 1/4 cup at a time and beat until incorporated. Add yogurt & egg white and beat again. Then add allulose sweetener and beat again until completely smooth
- Pour overtop cookie dough base
- Take remaining cookie dough and roll into small balls and flatten and place overtop as seen in the later photos (16 or 9 depending how large you're cutting them)
- Bake at 325 for 23-25min until edges start to golden
- Set at room temp to cool for 30 min, then place in the fridge for at least 2 hours for cheesecake to fully set and easier slicing
- Slice and enjoy!
- Keep stored in the fridge
Notes
You can use organic powdered sugar in place of allulose in the cheesecake, and organic cane sugar in the cookie layer in place of the sugar free sweeteners
