Beef and Feta Meatballs w/ Spicy Chimichurri Sauce
If you need a quick protein to have meal prepped in your refrigerator for the week, or a standout appetizer at a family gathering, these easy beef and feta meatballs are for you!
Ingredients
Beef and Feta Meatballs
- 1 lb1 lb1 lb 85% Lean Ground Beef - US Wellness Meats
- 0.5 cup0.5 cup0.5 cup Feta Cheese, (heaping)
- 1 whole1 whole1 whole Egg
- 3 cloves3 cloves3 cloves Garlic
- 0.5 cup0.5 cup0.5 cup Panko Bread Crumbs, (I use homemade sourdough bread crumbs)
- 1 tsp1 tsp1 tsp Super Gyro Seasoning - Primal Palate
- 1 tsp1 tsp1 tsp Everything Bagel Seasoning
- 1 tsp1 tsp1 tsp Paprika
- 1 tsp1 tsp1 tsp Garlic Powder
- 1 tsp1 tsp1 tsp Sea Salt
- 0.5 tsp0.5 tsp0.5 tsp Black Pepper
Spicy Chimichurri
- 1 cup1 cup1 cup Parsley, fresh
- 0.5 cup0.5 cup0.5 cup Basil, Fresh
- 0.5 cup0.5 cup0.5 cup Cilantro, fresh
- 1 whole1 whole1 whole Lime Juice, (you can use a lemon here, just changes the flavor slightly!)
- 4 cloves4 cloves4 cloves Garlic
- 0.5 cup0.5 cup0.5 cup Extra Virgin Olive Oil
- 0.333 cup0.333 cup0.333 cup White Wine Vinegar
- 1 tsp1 tsp1 tsp Chili Flakes
- 1 tsp1 tsp1 tsp Sea Salt
- 0.25 tsp0.25 tsp0.25 tsp Black Pepper - Primal Palate
- 1 tsp1 tsp1 tsp Super Gyro Seasoning - Primal Palate
- 0.5 whole0.5 whole0.5 whole Red Onion, can use a shallot here as well. gives an extra kick!
Process
Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Beef and Feta Meatballs:
- Combine all ingredients in a bowl and squish/fold/ mix everything together with your hands(I like to wear gloves) until all ingredients are combined evenly.
- Then roll meat into balls 1-1.5 inches in diameter.
- Preheat your pan over medium to low heat and cook each side until browned and internal temperature is *at least* 135ºF. I cook mine until about 145ºF.
- Chimichurri Sauce:
- Combine all ingredients in a food processor or a heavy duty blender, and blend until everything is in nice little bits and can pour/ drizzle easily.
- To serve, you can have meatballs and sauce separate. Or you can serve meatballs over rice with the chimichurri sauce drizzled over the top!
