Mediterranean Lamb Meat Balls with Tzatziki
A classic meatball recipe can easily be transformed into a delicious Mediterranean inspired meal with a few seasoning changes. I used ground lamb instead of beef, and our Super Gyro seasoning for incredibly flavorful lamb meatballs. Serve with a simple savory yogurt sauce, roasted lemon potatoes, and feta to complete the meal!
Ingredients
- 1 lb1 lb1 lb Ground Lamb - US Wellness Meats

- 1/2 cup1/2 cup1/2 cup Gluten-free White Sandwich Bread (Trader Joe's), 2 slices
- 2 Tbsp2 Tbsp2 Tbsp Parsley, Flat Leaf

- 2 tsp2 tsp2 tsp Super Gyro Seasoning - Primal Palate

- 1/4 cup1/4 cup1/4 cup Parmesan Cheese, grated

- 5.3 oz5.3 oz5.3 oz Plain Greek Yogurt
- 1 clove1 clove1 clove Garlic, pressed

- 1/3 cup1/3 cup1/3 cup Cucumber, diced
- 1 Tbsp1 Tbsp1 Tbsp Dill, Fresh, chopped
- 1/2 tsp1/2 tsp1/2 tsp Himalayan Pink Salt - Primal Palate

- 1/2 tsp1/2 tsp1/2 tsp Black Peppercorns, Ground Fresh

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Preheat your oven to bake at 350 degrees F.
- Add the ground lamb to a large mixing bowl.
- Rip the slices of bread into smaller pieces and add them to a mini chop food processor along with the fresh parsley. Pulse until you have fine breadcrumbs.
- Add the parsley and breadcrumbs to the bowl with the lamb.
- Season the ground lamb with the Super Gyro seasoning and the grated parmesan cheese.
- Mix all of the seasonings into the ground lamb until everything is evenly combined.
- Form the mixture into 1 inch size meatballs, and place them on a plate.
- Heat a cast iron skillet over medium heat, and sear the meatballs on all sides. They should look brown and crispy on the outside. This will take about 5 minutes for all of the meatballs.
- Once you have browned all the mealballs on all sides, place the skillet in the oven to finish cooking the meatballs for 15 minutes.
- Once the meatballs have finished cooking, remove them from the oven to finish plating your dish.
- In a small mixing bowl, stir together the yogurt, pressed garlic, chopped cucumber, dill, salt and pepper.
- Serve the meatballs with the yogurt sauce, and any fresh sides you would like. We enjoy this dish with roasted potatoes, a simple salad, and feta cheese.
