Best Healthy Banana Bread (Vegan)
This vegan banana bread is made with wholesome ingredients like whole wheat flour, almond butter, maple syrup, and lots of bananas!
Ingredients
- 1.5 cups1.5 cups1.5 cups Banana, 360-380g, about 3-4 medium bananas, mashed
- 3 Tbsp3 Tbsp3 Tbsp Maple Syrup, Pure
- 5 Tbsp5 Tbsp5 Tbsp Almond Butter, 75 g, or other nut/seed butter
- 2 tsp2 tsp2 tsp Apple Cider, vinegar*
- .25 cup.25 cup.25 cup Soy Milk, 60 mL
- 1 tsp1 tsp1 tsp Almond Extract, or vanilla extract
- 1.5 cups1.5 cups1.5 cups Whole Wheat Flour, + 4 tsp, 190g
- .75 tsp.75 tsp.75 tsp Baking Soda
- .5 tsp.5 tsp.5 tsp Cinnamon, Ground, optional
- .25 tsp.25 tsp.25 tsp Nutmeg, optional
- 1 pinch1 pinch1 pinch Salt
- .75 cup.75 cup.75 cup Walnuts, chopped

Process
Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Preheat oven to 350°F. Grease or line a loaf pan with parchment paper and set aside.
- In a large bowl, mix together mashed bananas, maple syrup, almond butter, vinegar, milk, and almond extract.
- In a separate bowl, whisk flour, baking soda, cinnamon, nutmeg, and salt.
- Add flour mixture into the banana mixture and gently fold together. Mix until ingredients are almost incorporated (some dry flour pockets are OK at this point), add walnuts, and gently fold a couple more times to evenly distribute the walnuts. At this point no flour streaks should remain. Be sure to scrape down the sides and the bottom of the bowl for dry flour.
- Pour batter into the prepared loaf pan. Bake for 60-90 minutes, or until a toothpick inserted in the center of the loaf comes out clean. After 30 minutes, keep an eye on the bread to make sure it's not browning too quickly on top. If it looks like the top is starting to burn, tent with foil.
- Let the bread cool for about 10 minutes in the pan, then transfer to a cooling rack. Cool completely before serving.
Notes
*A 9x5-inch loaf pan will take about 60 minutes to bake. An 8x4-inch pan can take up to 90 minutes. *Make sure your bananas are very ripe with lots of brown spots.
