Beyond Meat Loaded Chik’n Salad
I recently spotted Beyond Meat's new chik'n pieces and just knew I had to whip up another meal sized salad. They have been my vibe all summer and into the fall. Loads of veggies, golden chik'n as the centerpiece, sweet balsamic glaze, and heaps of feta cheese.

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Begin heating a good splash of EVOO in a non-stick set to about medium. Once heated, add your frozen Beyond Meat chik'n pieces. Season with salt & pepper flakes. Cook for 4ish (approximate) minutes, flipping often for even browning in the skillet. Once your pieces are nice and golden & fork tender, turn off the heat.
- For the salad, add your romaine to a mixing bowl and dress with Le Grec Greek to your liking. I prefer less dressing, but dress to your heart's content. Toss and transfer your lettuce to a large dinner serving plate. Nestle your red onion, tomatoes, Bocconcini, and medley tomatoes around your salad. Finish with a good sprinkle of parsley & green onions before dropping the cooked chik'n in the center of your salad.
- Give the chik'n a drizzle of sweet balsamic glaze and finish the salad with additional parsley & green onions, a sprinkle of pep flakes, and as much feta as your heart desires. ENJOY!
Notes
- I will have a BYPASS or BUY review for the chik'n and the Impossible breakfast sausages I tried recently within the next few days.
