Mediterranean Chik’n Pitas
Warm Greek pitas topped with fresh veggies, red pepper hummus, seasoned & fried chik'n strips, creamy tzatziki, tangy feta, and arugula shoots. So pretty, so quick and so delish!
Ingredients

- 397 grams397 grams397 grams Plant-Based Chick'n Strips - Gardein, Supreme Line. 1/2 the bag
- 1 whole1 whole1 whole Extra Virgin Olive Oil, For Frying
- 1 tsp1 tsp1 tsp Greek Seasoning Blend
- 1 whole1 whole1 whole Red Pepper Flakes, See Recipe

- 1 whole1 whole1 whole Himalayan Pink Salt, See Recipe

- 1 whole1 whole1 whole Black Peppercorns, Ground Fresh, See Recipe

- 1 whole1 whole1 whole Boston Lettuce, approx pieces, washed & dried
- 1 whole1 whole1 whole Roma Tomato, sliced
- 0.5 whole0.5 whole0.5 whole Red Onion, small onion, thinly sliced
- 1 whole1 whole1 whole Tzatziki, Pre-Made

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Begin heating a good splash of EVOO set to about medium. Add the chik'n strips, Greek seasoning, and a good pinch of salt, pepper, and pepper flakes. Toss to coat the strips in the skillet. Cook until the strips are nice and golden, flipping them occasionally for even browning. The strips will take roughly 10 minutes to cook.
- To heat the pitas, I used a grill pan set to about medium. Once heated, I placed my pitas on the pan dry and let them go about 45 seconds per side until they were softened up and malleable.
- Assembly - Start by spreading red pepper hummus on each pita followed by laying out a few slices of lettuce, tomato, red onion, and a good pinch of cracked pepper. Next, divide the seasoned strips between your pitas and top with a drizzle of tzatziki sauce, a sprinkle of crumbled feta, and some gorgeous arugula shoots.

Notes
- Other ingredients you could add include thinly sliced cukes, sliced olives, fresh parsley, pickled onions or hot peppers. All would be lovely.
