Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. In a medium size bowl, combine the flour, baking soda, and salt. Set aside.
  2. In the bowl of a stand mixer, beat the butter and sugars together until light & fluffy, about 2-3 minutes.
  3. Add the egg and vanilla and beat until fully incorporated.
  4. Scrape down the bowl, then add the dry ingredients and mix until just combined. Do not over-mix!
  5. Gently fold in the sprinkles.
  6. Using a cookie scoop, scoop out the cookie dough and place on one baking sheet lined with parchment paper. Freeze the cookie dough for 15 minutes.
  7. Toward the end of the freeze time, preheat the oven to 350 degrees F.
  8. Divide cookie dough up between two baking sheets placed about two inches apart. Bake cookies for 14-16 minutes. Allow cookies to cool on the baking sheet.

Notes

You can skip over the freeze time and bake them right away for 1-2 minutes less. They may loose their textured top, but they'll still be delicious! Do not over-mix the dough when you add the flour! Over-mixing leads to tough, dry cookies. Use a cookie scoop to get 10-12 perfectly seized cookies! Do not roll them with your hands or they'll lose their textured top. Only use traditional-style sprinkles! Any other type of sprinkles will melt or bleed into the dough.
