Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Start by caramelizing your onions. This takes some time since you need to slowly cook the onions.
- Slice two large yellow onions into thin rings.
- Heat a heavy pot over medium heat. Add a tablespoon of butter, and then the onions to the pot. Season the onions with a pinch of salt, and stir to combine.
- Turn the heat down to low, and cover the pot with a lid. Stir the onions every so often until they reduce and turn brown in color. This will take around an hour or longer. If they start to cook too fast toward the end, move the pot to a smaller burner.
- You can make the onions the day before you plan to make the burgers so that they are ready to go before you make your meal.
- Place your burger meat in a medium size mixing bowl, and season with the Adobo Seasoning. Mix to evenly combine.
- Form 4-6 burger patties depending on how large you would like your burgers to be. You will be smashing these burgers, but I try to form them on the thinner side.
- Heat a large cast iron skillet over medium heat. Add 2-3 burgers to the skillet at a time, depending on how many can fit in the skillet.
- As the burgers cook, smash them down with a spatula, ramekin, or a burger press.
- For medium burger, cook them for approximately 2-3 minutes a side. Once they have finished cooking, place a slice of cheese on top, turn the heat off, and cover the pan with a lid to melt the cheese.
- Remove the burgers from the pan, and repeat with any remaining burgers.
- Toast your buns in the toaster.
- In a small mixing bowl, whisk together the mayo and Truff Sauce.
- Spread the spicy mayo on the burger buns. Place the burger on the bottom bun, followed by a thin layer of the spicy mayo. Then layer on the caramelized onions, tomato, pickles, lettuce, and top with the top layer of the bun.
- Enjoy!
