Atole is a traditional Mexican beverage made from corn masa that can be enjoyed as a filling breakfast or a comforting evening treat. Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Add the masa harina to a medium pan over low heat.
  2. Toast until lightly golden, stirring frequently to ensure it toasts evenly and doesn't burn.
  3. Set aside to cool.
  4. In a medium pot, simmer the blackberries and 1 cup of water for 5 minutes until they break down and release their juices.
  5. Transfer the berries to a blender with 3 cups of Maizly milk.
  6. Blend until smooth.
  7. Rinse pot and add 2 cups of water, 1/4 cup of brown sugar, and the cinnamon stick.
  8. Simmer on medium-low for 8-10 minutes until the liquid is aromatic and warm amber in color.
  9. Strain the blackberry-milk mixture directly into the pot with the cinnamon water.
  10. Blend the cooled toasted masa with 1 cup of water and 1 cup of Maizly milk until perfectly smooth.
  11. Slowly add the masa mixture to the pot, whisking constantly as you pour to prevent any clumps.
  12. Cook over medium-low heat, whisking constantly, for 8–10 minutes, until the atole thickens to a rich, glossy consistency.
  13. Remove the cinnamon stick and taste for sweetness.
  14. Add another 1/4 cup of brown sugar (or more) if a sweeter flavor is desired.
  15. Ladle the warm atole into mugs.
