Blackberry Coulis and Lime Curd Parfait (Vegan)
One of my all-time favorite flavor pairings is blackberries and lime. This light and refreshing summer dessert layers sweet blackberry coulis, zesty lime curd, and a just sweet enough homemade whipped cream. It’s a perfectly easy, cool, summer treat that’s completely dairy- and egg-free.
Ingredients
- 0.75 cup0.75 cup0.75 cup blackberry coulis, (see notes for link to my recipe)
- 0.75 cup0.75 cup0.75 cup Lime Curd (Vegan) (click for recipe)
- .75 cup.75 cup.75 cup Dairy-Free Whipping Cream, -cold
- .33 tsp.33 tsp.33 tsp Cream of Tartar, (1/4 tsp and 1/8 tsp)
- .75 tsp.75 tsp.75 tsp Vanilla Extract

- 6 Tbsp6 Tbsp6 Tbsp Powdered Sugar
- 4 whole4 whole4 whole Blackberries, -for decorating
- 1 pinch1 pinch1 pinch Lime Zest, -for decorating

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Prepare the blackberry coulis and the lime curd. They can both be made ahead of time. Make sure the lime curd is room temperature before assembling the dessert.
- To prepare the whipped cream, add the heavy cream and cream of tartar to the bowl of a stand mixer. Whip on high with a balloon whisk attachment for 3 to 5 minutes. Once soft peaks are achieved, add the vanilla extract and powdered sugar and continue whipping on high for another 3 to 5 minutes.
- To assemble the desserts, you will add 3 tablespoons of blackberry coulis to each dessert container. Make sure it is evenly covering the bottom.
- To a piping bag (fitted with the tip of your choice) add 2/3 of the whipped cream. Pipe equal amounts of the whipped cream into each container, covering the blackberry coulis layer.
- Now add 3 tablespoons of lime curd to each container making sure it is evenly spread out over the whipped cream layer.
- The last of the whipped cream can either be dolloped onto the tops of each dessert or added to the piping bag and piped over the top of each dessert.
- For a final look, a blackberry can be placed on top of each dessert and a little lime zest sprinkled over the top of each dessert.
- I suggest serving the desserts same day, but they will be fine in the refrigerator for a day or two.
