Lime Curd (Vegan)
This lime curd hits just the right mix of tangy and sweet, making it perfect for topping ice cream, baked treats, cakes, or pies. With only five ingredients and about 15 minutes, it’s a breeze to make. The result is a smooth, bright, and gently sweet treat that’s bound to delight.
Ingredients
- 6 Tbsp6 Tbsp6 Tbsp Oat Milk, Organic, (any plant-based milk will work)

- .75 cup.75 cup.75 cup Cane Sugar, (150 grams)
- 2 Tbsp2 Tbsp2 Tbsp Cornstarch
- 1 Tbsp1 Tbsp1 Tbsp Lime Zest, ( You’ll need four to five limes to gather all the juice and zest needed for the recipe.)
- .5 cup.5 cup.5 cup Lime Juice
- 2 Tbsp2 Tbsp2 Tbsp Plant-Based Butter, -room temperature

- Add the sugar and cornstarch to a small pot; whisk to combine.
- Add the lemon juice, lemon zest and milk to the pot; whisk to combine.
- Set the pot over medium heat and bring the mixture to a simmer; stirring occasionally. The mixture will begin to change color (greenish) and thicken.
- We want the consistency to be thick yet pourable (remember it thickens as it cools).
- Once the curd has reached the desired thickness, remove the pot from the heat and add the butter. Stir the butter in until fully incorporated.
- Pour the curd into a heat proof container and allow to cool to room temperature before covering and storing in the refrigerator.
- The curd can be stored in an airtight container in the refrigerator for up to 2 weeks; it can be stored in the freezer for a few months.
- This recipe yields 1 cup of curd.
