Blackberry Lime Ice Cream (Vegan)
Nothing says summer quite like this blackberry lime ice cream. This rich, creamy no-churn delight brings together the irresistible combo of sweet, juicy blackberries and zesty lime. I started with a simple vanilla base and upgraded it with sweet, homemade blackberry coulis and tangy, homemade lime curd. A refreshing, dairy- and egg-free indulgence that’s perfect for cooling off on warm days.
Ingredients
- .75 cup.75 cup.75 cup Sweetened Condensed Oat Milk, (see notes below for my homemade version)
- .75 cup.75 cup.75 cup Dairy-Free Whipping Cream, -cold
- .25 cup.25 cup.25 cup lime curd, (see notes below for my homemade version)
- .5 cup.5 cup.5 cup blackberry coulis, (see notes below for my homemade version)
Process
Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- To a medium bowl add the heavy cream. Whip on medium high with a hand mixer until soft peaks are reached.
- To a second medium bowl add the sweetened condensed milk and the lime curd. Whip on medium high with a hand mixer until fully combined (30 seconds to 1 minute)
- Add the sweetened condensed milk mixture to the whipped heavy cream and combine them by folding until fully incorporated.
- Add the blackberry coulis and gently fold in. We want to create a marbled effect so, stop folding when that is achieved.
- Pour the ice cream into a freezer safe container. I use a 6x6x2 glass container with a lid.
- Optional - add lime zest and blackberries to the top.
- Place the ice cream in the freezer. It will take at least 6 hours in the freezer to achieve a solid, scoop able consistency. I usually leave mine in the freezer overnight.
