Blender Breakfast Waffles
Waffles, our favorite vessel for warm maple syrup! All those little pockets that get filled up as you slather butter and pour on that syrup. Oh boy! And frankly, what meal isn't better when waffles are served? Brunch, brinner...or any meal in between. A round, thick waffle has become our favorite shape, more fluffiness means the ratio of syrup to waffle is the BEST!
Another recipe using pili nuts and boy do they lend some creaminess to the batter and the luxurious texture of the waffle is truly remarkable.
Ingredients
- 1.25 cups1.25 cups1.25 cups Almond Milk
- 4 tsp4 tsp4 tsp Lemon Juice
- 1 whole1 whole1 whole Egg, room temperature
- .5 cup.5 cup.5 cup Raw Unsalted Pili Nuts, can sub macadamia nuts
- .25 cup.25 cup.25 cup Pure Maple Syrup
- .25 cup.25 cup.25 cup Ghee, melted & slightly cooled, can sub butter or coconut oil
- 1 tsp1 tsp1 tsp Pure Vanilla Extract
- 1.5 tsp1.5 tsp1.5 tsp Baking Powder
- 1.5 tsp1.5 tsp1.5 tsp Sea Salt
- 1 cup1 cup1 cup Cassava Flour

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- In a small measuring cup, combine the almond milk and lemon juice. Whisk together and let the mixture set for 5 minutes or so, resulting in almond milk “buttermilk.”
- To your high powered blender base, pour in the buttermilk then add the egg, pili nuts, syrup, ghee, vanilla, baking powder, salt and cassava flour, in that order. Blend until the ingredients are well combined and the nuts are completely smooth.
- Preheat your waffle iron according to the manufacturer's directions. When it’s ready, pour ½ to ¾ cup of the batter into the iron. Cook for 4-5 minutes (times will vary depending on your waffle iron) or until the waffle is golden and no longer steaming. Remove the waffle and repeat with remaining batter.
- Serve with toppings of choice.
Notes
You can keep the waffles warm on a baking rack, as you make them, in your oven set to about 170°. We like to warm our syrup up and serve with the waffles.
