Blueberry Pie “Blizzard”
This Blueberry Pie “Blizzard” is protein-packed, sweet, creamy, and has that golden puff pastry magic on top — no ice cream maker required! The cottage cheese base is blended until silky, lightly sweetened with maple syrup, and finished with a dollop of jam + flaky pastry. Pure summer joy in a cup.
Ingredients
- 40 grams40 grams40 grams Gluten-Free Puff Pastry, One sixth of a sheet; thawed
- 0.5 cup0.5 cup0.5 cup Cottage Cheese, or 1 single serve container
- 0.25 cup0.25 cup0.25 cup Frozen Blueberries
- 2 Tbsp2 Tbsp2 Tbsp Pure Maple Syrup
- 1 Tbsp1 Tbsp1 Tbsp Blueberry Superfood Jam - Smash Foods, or blueberry jam of choice
- 1 whole1 whole1 whole Egg, for egg wash
Process
Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Make the “blizzard” base: In a small blender or with an immersion blender, blend together cottage cheese, frozen blueberries, and maple syrup until smooth. Pour back into the cottage cheese cup and freeze for 30 minutes.
- Prep the puff pastry pie topper: Use the top of a mason jar lid (or something slightly wider than the cup) to cut out a circle from the puff pastry. Score an X in the center and brush with egg wash. Bake according to package directions
- Optional: Use remainder of pastry sheet to cut out extra pie toppers to use throughout the week, or make rectangle cuts as “breadsticks” to pair with dinner meals.
- Assemble: Remove your blizzard base from the freezer, top with 1 tbsp blueberry jam, and gently place the puff pastry on top like a pie lid.
- Serve & enjoy!
Notes
To get a little puff pastry in each bite, you can cut the baked pie lid into pieces and stir in before enjoying.
