Ice cream

  • 2 cups Kefir
  • 1 cup Blueberries, Frozen
  • 2 whole Banana, Sliced into coins and frozen

Process

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. First, make your ice cream by blending together all ice cream ingredients until smooth.
  2. Pour into a loaf pan and freeze to set (as a hard ice cream instead of a soft serve).
  3. Next make your cookies.
  4. Preheat oven to 350°F.
  5. Beat together the butter and sugars.
  6. Add the egg and vanilla and beat.
  7. Add the rest of the ingredients except mix ins and beat into a dough.
  8. Add mix ins!
  9. Scoop 1/2 ounce scoops onto parchment lined baking sheet.
  10. Bake for 10-13 minutes (depending on if you want a super soft or slightly sturdier cookie.)
  11. Let cool COMPLETELY before assembling sandwiches by adding a scoop of ice cream on one cookie then sandwiching with another.
  12. Enjoy!
