Ice Cream Cookie Protein Sandwiches
This is your typical chocolate chip cookie except it’s higher in protein and stuffed with “ice cream” that’s not actually ice cream. The middle is only 2 ingredients and is also packed with protein! These are such a great summer treat. I know the kids will love them and as a parent, you don’t have to worry about what your kids are eating!
Ingredients

- 0.5 cup0.5 cup0.5 cup Sprouted Rolled Oats - One Degree Organic
- 1 tsp1 tsp1 tsp Baking Soda

- 8 oz8 oz8 oz Whipped Cream, Tru Whip
- 0.333 cup0.333 cup0.333 cup Vanilla Protein Powder

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Preheat oven to 350 degrees.
- In a mixing bowl, add all of your cookie ingredients. Whisk together until the cookie dough is formed. Scoop cookie dough onto parchment paper. Place cookies in the oven and bake for 12-15 minutes.
- While the cookies are cooling, mix the whipped cream and protein powder together. Stuff each cookie sandwich with it. Place cookies in the freezer until the whipped cream hardens.

Notes
You can make the cookies whatever size you want - small or jumbo! The batter may be more runny than other cookie doughs, this is because of the whipped cream. The cookies will spread a bit more than others, so separate them on the pan. To create perfect circle cookies — place a bowl on top of the cookie when they come out of the oven and rotate the bowl in a circle. That will fix any cookies that didn’t keep shape!
