Brainiac Banana Muffins
These brainiac banana muffins are the perfect meal prep items. The kids love mini muffins and I love to pack them with nutrients. These are free from all the extra junk that you find in store bought muffins. Plus, they have one major ingredient in them that sends power to their brains… walnuts!
Ingredients
- 1 whole1 whole1 whole Egg
- 1 whole1 whole1 whole Banana
- 0.5 cup0.5 cup0.5 cup Walnuts

- 0.333 cup0.333 cup0.333 cup Pure Maple Syrup
- 1 cup1 cup1 cup All Purpose Flour
- 0.25 cup0.25 cup0.25 cup Oats, Rolled
- 1 tsp1 tsp1 tsp Cinnamon, Ground

- Preheat your oven to 350 degrees.
- Grease mini muffin pan or regular regular pan.
- And a blender, add your egg, banana, walnuts, and maple syrup. Blend until creamy. Pour into a mixing bowl and add the rest of the ingredients. Stir together.
- Scoop into your muffin pan. Place muffin pan in the oven and bake for 15 to 18 minutes.
