Bruschetta Chicken Pasta Salad
I am doing a summer pasta salad series over on instagram and this was the second recipe I posted for the series. It's light, refreshing and delicious! With nice and ripe tomatoes, fresh basil and garlic, balsamic glaze...this is a summer meal worth trying. I simply grilled some chicken that was marinated in balsamic dressing to pull it together with protein. This did not last long for us so we know it's perfect for a weeknight dinner with leftovers, or as an addition to your bbq spread!
Ingredients
- 1 lb1 lb1 lb Spaghetti, or pasta of choice

- 1.5 lb1.5 lb1.5 lb Chicken Breasts, Boneless Skinless, sliced thin

- 2 cup2 cup2 cup Tomato, Cherry, halved

- 0.333 cup0.333 cup0.333 cup Basil, Fresh, chopped

- 1 Tbsp1 Tbsp1 Tbsp Garlic, minced

- 0.5 cup0.5 cup0.5 cup Extra Virgin Olive Oil, divided
- 1 cup1 cup1 cup Organic Balsamic Glaze, divided

- 2 Tbsp2 Tbsp2 Tbsp Salt and Pepper

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Add your thin sliced chicken, and enough olive oil (1/4-1/3c) and (1/2c) balsamic glaze to just coat the chicken into a large ziplock bag.
- Mix it up well and let marinate in the fridge for about an hour.
- Cook your pasta according to package instructions.
- While your chicken is marinating and pasta water is boiling, add sliced tomatoes, basil, garlic, remaining olive oil, remaining balsamic glaze, and salt and pepper to taste into large bowl.
- Toss until well combined. Set aside, tossing occasionally.
- Heat your grill or grill pan to medium-high heat.
- Grill chicken for 2-3 minutes on each side, or until cooked through.
- Slice the chicken into bite size pieces and add to your bruschetta.
- Toss to combine.
- Once your pasta is finished boiling, add to a pasta bowl.
- Pour in the bruschetta and chicken mixture.
- Toss well to combine.
- Feel free to add more balsamic glaze here if you like.
- Enjoy warm or cold!
