Balsamic Parmesan Grilled Veggie Pasta Salad
It's grilling season and that doesn't just include burgers and chicken. This grilled veggie pasta salad is a fun way to add those summer grilling flavors to your plate! I marinated the veggies in my favorite marinade that I make for chicken and it works so well on these. You can also add any veggies you like - I think asparagus would be perfect in this, too!
Ingredients
For The Pasta
- 0.5 lb0.5 lb0.5 lb Campanelle Pasta
- 1 whole1 whole1 whole Zucchini, large, cut into strips long ways
- 1 whole1 whole1 whole Red Bell Pepper, cut into large strips
- 2 whole2 whole2 whole Corn, on the cob
- 0.333 cup0.333 cup0.333 cup Parmesan Cheese, grated

- 0.333 cup0.333 cup0.333 cup Extra Virgin Olive Oil
- 0.25 cup0.25 cup0.25 cup Organic Balsamic Glaze

- 0.25 cup0.25 cup0.25 cup Lemon Juice
- 1 whole1 whole1 whole Garlic, clove, minced

For The Veggie Marinade
- 0.25 cup0.25 cup0.25 cup Extra Virgin Olive Oil
- 0.25 cup0.25 cup0.25 cup White Wine Vinegar
- 0.25 cup0.25 cup0.25 cup Organic Balsamic Glaze

- 2 Tbsp2 Tbsp2 Tbsp Hot Sauce
- 1 Tbsp1 Tbsp1 Tbsp Honey

- 1 tsp1 tsp1 tsp Garlic Powder

- 1 tsp1 tsp1 tsp Onion Powder

- 0.5 tsp0.5 tsp0.5 tsp Salt and Pepper

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Add all marinade ingredients to a bowl and whisk.
- Add your cut veggies and marinade to a ziplock bag and let marinade for at least 30 minutes.
- Cook your pasta according to package instructions.
- Preheat your grill to 400f.
- Once the grill is preheated, place all your veggies on the grill.
- Grill on each side for 4-5 minutes, or until grilled and softened.
- Once finsihed, remove and let cool a bit.
- Add your pasta and all pasta ingredients (except parmesan cheese) to a large bowl.
- Mix well to combine.
- Once your veggies cool off a bit, cut them into bite size pieces, and cut the corn off the cob.
- Add veggies and parmesan cheese to the bowl and toss.
- Adjust any flavors and enjoy!
