cajun black eyed peas hummus + pickled okra relish
black-eyed peas = good luck in the new year đâš (or at least thatâs what the internet promises, & Iâm not arguing đ)
traditionally served with collard greens, cornbread, & pork, I took that lucky new year's combo & turned it into a bold, scoopable dip! this cajun black-eyed pea hummus uses my classic recipe, but swaps chickpeas for black-eyed peas, then gets topped with a spicy, tangy pickled okra relish (& yes⊠bacon makes everything better đ„đ„).

Ingredients
cajun black eyed peas hummus
- 15 oz15 oz15 oz Black Eyed Peas, 1 can, drained & rinsed

- 1/2 tsp1/2 tsp1/2 tsp Baking Soda
- Water, to boil + extra to thin hummus
- 2-4 Tbsp2-4 Tbsp2-4 Tbsp Jalapeño Botana Sauce - Siete Foods, or any hot sauce you like

- 2 Tbsp2 Tbsp2 Tbsp Pickled Okra, the juice from the okra
- 2 tsp2 tsp2 tsp Cajun Seasoning

pickled okra relish
- 1/2 cup1/2 cup1/2 cup Pickled Okra, finely chopped
- 1/4 cup1/4 cup1/4 cup Jalapeños, Pickled, finely chopped
- 1/2 cup1/2 cup1/2 cup sautéed frozen vegetables (click for recipe), follow this recipe for frozen corn
- 4-64-64-6 easy baked bacon (click for recipe), finely chopped
- 10 oz10 oz10 oz Diced Tomatoes and Green Chilies, Original - Rotel, drained
- 2-4 Tbsp2-4 Tbsp2-4 Tbsp Jalapeño Botana Sauce - Siete Foods, or any hot sauce you like

- 1 tsp1 tsp1 tsp Cajun Seasoning

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- first make a batch of cajun black eyed peas hummus by placing black eyed peas in a saucepan with baking soda & cover with water.
- bring to a boil, then reduce to a simmer for 15-20 minutes (drain before proceeding to step 3).
- in a food processor, combine remaining hummus ingredients.
- in a separate bowl, combine all ingredients for pickled okra relish.
- add hummus to a bowl, then add pickled okra relish on top.
- serve as a dip with my green chile âcornbread wafflesâ OR your favorite dipping vessel.
